Description

African Chicken Peanut Stew is a hearty, flavorful stew made with chicken, peanut butter, and simple spices. A comforting halal-friendly meal that’s easy to prepare in 30 minutes.


Ingredients

  • 1.5 lb chicken thighs
  • ½ cup tomato sauce
  • 1 red bell pepper, chopped
  • ½ cup peanut butter
  • ¼ cup olive oil
  • ½ onion, chopped
  • 1 teaspoon cayenne pepper
  • 1 teaspoon bouillon powder
  • 2 cups chicken stock
  • 1 teaspoon black pepper
  • 1 teaspoon salt (or to taste)


Instructions

  1. Wash and pat dry the chicken. Rub with salt and black pepper.
  2. Heat olive oil in a skillet and brown chicken on both sides. Remove and set aside.
  3. In a large pot, heat ¼ cup olive oil. Add onions and red bell pepper; sauté for a few minutes.
  4. Add tomato sauce, cayenne, bouillon powder, and chicken stock. Stir and bring to a simmer.
  5. Add chicken pieces and simmer for 10 minutes. Taste and adjust salt.
  6. Stir in peanut butter until fully incorporated. Cook until stew thickens.
  7. Serve hot and enjoy!

  • Optional: add garlic, fresh ginger, coriander, or cumin for extra flavor.
