Description
African Chicken Peanut Stew is a hearty, flavorful stew made with chicken, peanut butter, and simple spices. A comforting halal-friendly meal that’s easy to prepare in 30 minutes.
Ingredients
- 1.5 lb chicken thighs
- ½ cup tomato sauce
- 1 red bell pepper, chopped
- ½ cup peanut butter
- ¼ cup olive oil
- ½ onion, chopped
- 1 teaspoon cayenne pepper
- 1 teaspoon bouillon powder
- 2 cups chicken stock
- 1 teaspoon black pepper
- 1 teaspoon salt (or to taste)
Instructions
- Wash and pat dry the chicken. Rub with salt and black pepper.
- Heat olive oil in a skillet and brown chicken on both sides. Remove and set aside.
- In a large pot, heat ¼ cup olive oil. Add onions and red bell pepper; sauté for a few minutes.
- Add tomato sauce, cayenne, bouillon powder, and chicken stock. Stir and bring to a simmer.
- Add chicken pieces and simmer for 10 minutes. Taste and adjust salt.
- Stir in peanut butter until fully incorporated. Cook until stew thickens.
- Serve hot and enjoy!

- Optional: add garlic, fresh ginger, coriander, or cumin for extra flavor.
