Description
These Apple Pie Pancakes are fluffy, warmly spiced, and packed with tender apples, just like classic apple pie. Finished with a vanilla maple syrup drizzle, they’re perfect for a cozy breakfast or brunch.
Ingredients
- 1 cup all-purpose flour (or whole wheat flour)
- 1 tablespoon sugar (brown sugar preferred)
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg (optional)
- 1/4 teaspoon salt
- 1 cup milk (dairy or non-dairy)
- 1 large egg
- 2 tablespoons melted butter (or coconut oil)
- 1 cup apples, peeled and diced (Granny Smith or Honeycrisp)
- 1 teaspoon lemon juice
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
Instructions
- Peel and dice the apples, then toss them with lemon juice.
- In a bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix milk, egg, and melted butter.
- Pour wet ingredients into dry ingredients and mix gently. Fold in the apples.
- Heat a lightly greased skillet over medium heat. Pour about 1/4 cup batter per pancake.
- Cook until bubbles form on the surface, then flip and cook until golden.
- Warm the maple syrup with vanilla extract in a small saucepan.
- Serve pancakes warm with vanilla maple syrup drizzled on top.
Notes
- Do not overmix the batter to keep pancakes fluffy.
- Serve with extra apple slices or a pat of butter if desired.
