Description

These Apple Pie Pancakes are fluffy, warmly spiced, and packed with tender apples, just like classic apple pie. Finished with a vanilla maple syrup drizzle, they’re perfect for a cozy breakfast or brunch.


Ingredients

  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 tablespoon sugar (brown sugar preferred)
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1/4 teaspoon salt
  • 1 cup milk (dairy or non-dairy)
  • 1 large egg
  • 2 tablespoons melted butter (or coconut oil)
  • 1 cup apples, peeled and diced (Granny Smith or Honeycrisp)
  • 1 teaspoon lemon juice
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract


Instructions

  1. Peel and dice the apples, then toss them with lemon juice.
  2. In a bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix milk, egg, and melted butter.
  4. Pour wet ingredients into dry ingredients and mix gently. Fold in the apples.
  5. Heat a lightly greased skillet over medium heat. Pour about 1/4 cup batter per pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden.
  7. Warm the maple syrup with vanilla extract in a small saucepan.
  8. Serve pancakes warm with vanilla maple syrup drizzled on top.

Notes

  • Do not overmix the batter to keep pancakes fluffy.
  • Serve with extra apple slices or a pat of butter if desired.
