Ingredients
- For the Cod:
- 4 thick white cod fillets
- 1 tsp salt
- 1 tsp pepper
- For the Sauce:
- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 can full-fat coconut milk
- 3 tbsp fresh lemon juice
- 1 tsp lemon zest
Instructions
- Preheat oven to 180°C (350°F).
- Season cod fillets with salt and pepper.
- In a skillet, heat olive oil and sauté onion until translucent. Add garlic and ginger, cooking until fragrant.
- Stir in coconut milk, lemon juice, and zest. Simmer briefly.
- Place cod fillets in a baking dish and pour the sauce over the top.
- Bake for 20–25 minutes, until fish flakes easily with a fork.
