Baked Cod in Coconut Lemon Cream Sauce offers a tropical twist with creamy coconut milk and zesty lemon, perfect for quick weeknight dinners.


Ingredients

  • For the Cod:
  • 4 thick white cod fillets
  • 1 tsp salt
  • 1 tsp pepper
  • For the Sauce:
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 can full-fat coconut milk
  • 3 tbsp fresh lemon juice
  • 1 tsp lemon zest


Instructions

  1. Preheat oven to 180°C (350°F).
  2. Season cod fillets with salt and pepper.
  3. In a skillet, heat olive oil and sauté onion until translucent. Add garlic and ginger, cooking until fragrant.
  4. Stir in coconut milk, lemon juice, and zest. Simmer briefly.
  5. Place cod fillets in a baking dish and pour the sauce over the top.
  6. Bake for 20–25 minutes, until fish flakes easily with a fork.
