Description
Elegant and cozy, these baked pears combine creamy goat cheese, tart cranberries, and a drizzle of honey inside golden roasted fruit. Perfect as an appetizer, holiday side, or light dessert.
Ingredients
- 3 ripe but firm pears (Bartlett or Bosc), halved and cored
- 3 oz goat cheese
- 1/3 cup fresh cranberries
- 2 tbsp honey (plus more for drizzling)
- 2 tbsp unsalted butter
- 1/4 tsp ground cinnamon (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Slice pears in half lengthwise and scoop out cores. Trim bottoms if needed so they sit flat.
- Place pear halves in a baking dish cut-side up. Add a small pat of butter to each.
- Roast for 20 minutes or until pears are fork-tender and golden.
- While baking, simmer cranberries with 2 tbsp honey over low heat until berries burst slightly.
- Remove pears from oven and cool slightly. Fill each with goat cheese.
- Spoon cranberry mixture over cheese and drizzle with honey.
- Garnish with mint leaves and a sprinkle of cinnamon if desired. Serve warm or slightly chilled.
