Description

Elegant and cozy, these baked pears combine creamy goat cheese, tart cranberries, and a drizzle of honey inside golden roasted fruit. Perfect as an appetizer, holiday side, or light dessert.


Ingredients

  • 3 ripe but firm pears (Bartlett or Bosc), halved and cored
  • 3 oz goat cheese
  • 1/3 cup fresh cranberries
  • 2 tbsp honey (plus more for drizzling)
  • 2 tbsp unsalted butter
  • 1/4 tsp ground cinnamon (optional)
  • Fresh mint leaves for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice pears in half lengthwise and scoop out cores. Trim bottoms if needed so they sit flat.
  3. Place pear halves in a baking dish cut-side up. Add a small pat of butter to each.
  4. Roast for 20 minutes or until pears are fork-tender and golden.
  5. While baking, simmer cranberries with 2 tbsp honey over low heat until berries burst slightly.
  6. Remove pears from oven and cool slightly. Fill each with goat cheese.
  7. Spoon cranberry mixture over cheese and drizzle with honey.
  8. Garnish with mint leaves and a sprinkle of cinnamon if desired. Serve warm or slightly chilled.
