- For the Crust:
- 1½ cups vanilla wafer crumbs
- 1/3 cup granulated sugar
- 6 tbsp unsalted butter, melted

- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup mashed ripe bananas (about 2 bananas)
- 1/2 cup sour cream
- 1 tsp vanilla extract

- 1 cup fresh or frozen strawberries
- 2 tbsp sugar
- 1 tsp lemon juice
- 1 tsp cornstarch mixed with 1 tsp water
- For Topping:
- Fresh strawberry slices
- Banana slices (add just before serving)
- Whipped cream
Instructions
- Make the Crust: Preheat oven to 325°F (160°C). Combine vanilla wafer crumbs, sugar, and melted butter. Press into a springform pan and bake for 8 minutes. Cool.
- Prepare Strawberry Swirl: Cook strawberries, sugar, and lemon juice. Mash, add cornstarch slurry, and simmer until thickened. Cool.
- Prepare the Cheesecake Batter: Beat cream cheese, then add sugar. Mix in bananas, sour cream, and vanilla. Add eggs one at a time.
- Assemble: Pour batter over crust. Add spoonfuls of strawberry sauce and swirl with a skewer.
- Bake: Place pan in a water bath. Bake 60–70 minutes until edges are set. Cool and refrigerate at least 4 hours.
- Serve: Add whipped cream, strawberries, and banana slices just before serving.
Notes
- For a stronger banana flavor, add 1/4 tsp banana extract.
- Use a thick strawberry sauce for the best swirl design.
