A dreamy dessert that blends creamy banana richness with a bright, sweet strawberry swirl — a fruity cheesecake fantasy perfect for any occasion.


Ingredients

    • For the Crust:
    • 1½ cups vanilla wafer crumbs
    • 1/3 cup granulated sugar
    • 6 tbsp unsalted butter, melted

 

    • For the Cheesecake Filling:
    • 24 oz cream cheese, softened
    • 1 cup granulated sugar
    • 3 large eggs
    • 1 cup mashed ripe bananas (about 2 bananas)
    • 1/2 cup sour cream
    • 1 tsp vanilla extract

 

    • For the Strawberry Swirl:
    • 1 cup fresh or frozen strawberries
    • 2 tbsp sugar
    • 1 tsp lemon juice
    • 1 tsp cornstarch mixed with 1 tsp water

 

  • For Topping:
  • Fresh strawberry slices
  • Banana slices (add just before serving)
  • Whipped cream


Instructions

  1. Make the Crust: Preheat oven to 325°F (160°C). Combine vanilla wafer crumbs, sugar, and melted butter. Press into a springform pan and bake for 8 minutes. Cool.
  2. Prepare Strawberry Swirl: Cook strawberries, sugar, and lemon juice. Mash, add cornstarch slurry, and simmer until thickened. Cool.
  3. Prepare the Cheesecake Batter: Beat cream cheese, then add sugar. Mix in bananas, sour cream, and vanilla. Add eggs one at a time.
  4. Assemble: Pour batter over crust. Add spoonfuls of strawberry sauce and swirl with a skewer.
  5. Bake: Place pan in a water bath. Bake 60–70 minutes until edges are set. Cool and refrigerate at least 4 hours.
  6. Serve: Add whipped cream, strawberries, and banana slices just before serving.

Notes

  • For a stronger banana flavor, add 1/4 tsp banana extract.
  • Use a thick strawberry sauce for the best swirl design.
