Basil Chicken with Coconut Curry Sauce

Description

Tender chunks of chicken are simmered in a creamy coconut milk curry sauce with plenty of basil, garlic, jalapeno, and warm Indian spices. This flavorful basil chicken is easy to prepare and delicious served over hot cooked rice.


Ingredients

  • 4 boneless skinless chicken breast halves
  • 2 teaspoons curry powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon chili powder
  • 1 tablespoon olive oil
  • 1 medium red onion, chopped
  • 5 cloves garlic, minced
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 tablespoon dried basil
  • ¼ teaspoon ground ginger
  • 1 (14-ounce) can coconut milk, regular or light
  • ½ cup cream
  • 1 tablespoon cornstarch
  • 3-4 cups hot cooked rice


Instructions

  1. Cut the chicken breasts into 1-inch pieces and place them in a medium bowl.
  2. Stir together the curry powder, ½ teaspoon salt, pepper, and chili powder. Sprinkle the seasoning mixture over the chicken and toss until evenly coated.
  3. Cover the chicken and refrigerate for 1 to 2 hours to marinate.
  4. Heat the olive oil in a large nonstick frying pan over medium-high heat. Add the chopped red onion, dried basil, ground ginger, garlic, and jalapeno pepper. Cook until the onion is translucent.
  5. Add the marinated chicken and remaining ½ teaspoon salt. Cook for 5-6 minutes, stirring occasionally, until the chicken is no longer pink.
  6. In a bowl, whisk together the coconut milk, cream, and cornstarch until smooth and well combined.
  7. Carefully pour the coconut milk mixture into the skillet while whisking vigorously to prevent lumps.
  8. Cook and stir until the sauce is slightly thickened and bubbly. Reduce the heat and simmer for an additional 5-10 minutes.
  9. Serve the basil chicken and coconut curry sauce over hot cooked rice.

Notes

  • Regular or light coconut milk can be used depending on your preference.
  • Adjust the amount of jalapeno and chili powder to control the level of heat.
  • Marinating the chicken for 1-2 hours allows the curry spices to infuse the chicken with more flavor.
  • Serve over hot cooked white or brown rice for a complete meal.
