Description

This Bavarian Cream with Berries is a silky, elegant dessert made with rich vanilla custard folded into whipped cream, then chilled and topped with fresh seasonal berries.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 2 tablespoons gelatin
  • 1 teaspoon vanilla extract
  • 2 cups mixed seasonal berries (strawberries, blueberries, raspberries)


Instructions

  1. Bloom the gelatin in cold water and set aside for 5 minutes.
  2. Heat milk and sugar in a saucepan until the sugar dissolves.
  3. Whisk egg yolks in a bowl and slowly add the warm milk to temper.
  4. Return mixture to the saucepan and cook over low heat, stirring constantly, until thickened.
  5. Remove from heat and stir in gelatin until fully dissolved.
  6. Allow custard to cool slightly.
  7. Whip the heavy cream to soft peaks.
  8. Gently fold whipped cream into the custard until smooth.
  9. Divide into serving dishes and refrigerate for at least 4 hours.
  10. Top with fresh berries just before serving.
