Description
This Bavarian Cream with Berries is a silky, elegant dessert made with rich vanilla custard folded into whipped cream, then chilled and topped with fresh seasonal berries.
Ingredients
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 4 large egg yolks
- 2 tablespoons gelatin
- 1 teaspoon vanilla extract
- 2 cups mixed seasonal berries (strawberries, blueberries, raspberries)
Instructions
- Bloom the gelatin in cold water and set aside for 5 minutes.
- Heat milk and sugar in a saucepan until the sugar dissolves.
- Whisk egg yolks in a bowl and slowly add the warm milk to temper.
- Return mixture to the saucepan and cook over low heat, stirring constantly, until thickened.
- Remove from heat and stir in gelatin until fully dissolved.
- Allow custard to cool slightly.
- Whip the heavy cream to soft peaks.
- Gently fold whipped cream into the custard until smooth.
- Divide into serving dishes and refrigerate for at least 4 hours.
- Top with fresh berries just before serving.
