- 1 teaspoon ground cinnamon (optional)
- For Brushing:
- 1 large egg
- 2 tablespoons water
- 1 tablespoon granulated sugar
Instructions
- Prepare the pie crust by pulsing the flour, salt, sugar, butter, and cold water in a food processor until the dough just comes together. Alternatively, cut the butter into the flour mixture by hand using a pastry cutter or forks.
- Divide the dough into two discs, wrap tightly, and refrigerate for at least 2 hours.
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced apples, sugar, flour, lemon juice, vanilla, and cinnamon. Let stand for 15 minutes.
- Roll out one dough disc into a 12-inch circle and place it into a 9-inch pie dish.
- Fill the crust with the apple mixture, leaving behind any excess liquid.
- Roll out the second dough disc and place it over the filling or cut into strips to create a lattice crust. Seal and crimp the edges.
- Whisk together the egg and water, brush over the crust, and sprinkle with sugar.
- Bake for 45 minutes. If needed, cover the edges with parchment paper during the last 10 minutes to prevent over-browning.
