  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (optional)
  • 1 teaspoon ground cinnamon (optional)
  • For Brushing:
  • 1 large egg
  • 2 tablespoons water
  • 1 tablespoon granulated sugar


Instructions

  1. Prepare the pie crust by pulsing the flour, salt, sugar, butter, and cold water in a food processor until the dough just comes together. Alternatively, cut the butter into the flour mixture by hand using a pastry cutter or forks.
  2. Divide the dough into two discs, wrap tightly, and refrigerate for at least 2 hours.
  3. Preheat the oven to 375°F (190°C).
  4. In a large bowl, combine the sliced apples, sugar, flour, lemon juice, vanilla, and cinnamon. Let stand for 15 minutes.
  5. Roll out one dough disc into a 12-inch circle and place it into a 9-inch pie dish.
  6. Fill the crust with the apple mixture, leaving behind any excess liquid.
  7. Roll out the second dough disc and place it over the filling or cut into strips to create a lattice crust. Seal and crimp the edges.
  8. Whisk together the egg and water, brush over the crust, and sprinkle with sugar.
  9. Bake for 45 minutes. If needed, cover the edges with parchment paper during the last 10 minutes to prevent over-browning.
  10. Cool completely, then refrigerate for at least 4 hours before slicing and serving.
