Ingredients
- 0.5 lb elbow macaroni (about 2 cups uncooked)
- 3 tablespoons butter
- 2 tablespoons all-purpose flour
- 1.75 cups whole milk (or lower fat if preferred)
- 2 cups sharp cheddar cheese, freshly grated
- 2 tablespoons Parmesan cheese, finely grated
- 0.5 teaspoon yellow mustard
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
- 0.25 teaspoon paprika
- 0.25 teaspoon garlic powder
- 0.25 teaspoon onion powder
Instructions
- Cook the elbow macaroni according to package directions until al dente. Drain well.
- Melt butter in a medium saucepan over low heat. Whisk in flour and cook about 1 minute to form a roux.
- Warm the milk gently, then gradually whisk into the roux. Increase heat to medium, stirring constantly until sauce thickens.
- Stir in mustard, salt, pepper, paprika, garlic powder, and onion powder.
- Remove from heat. Add cheddar and Parmesan cheeses, stirring until melted and smooth.
- Combine drained macaroni with cheese sauce. Stir until all pasta is coated.
