  • ¼ teaspoon freshly ground black pepper
  • ¼ cup fresh basil leaves
  • 2 tablespoons salted butter
  • 2 tablespoons all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 quart vegetable broth
  • ¼ to ½ cup heavy cream (optional, for creaminess)


Instructions

  1. Roast the tomatoes: Preheat oven to 400°F (200°C). Arrange chopped tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast for 25–30 minutes until softened and slightly caramelized.
  2. Blend: Add roasted vegetables and fresh basil to a blender. Blend until smooth and creamy. (For a smoother texture, strain through a fine mesh sieve.)
