Black Pepper Beef Udon is a quick and flavorful noodle stir-fry made with tender beef, chewy udon noodles, and a bold black pepper sauce. Ready in minutes, it’s the perfect comforting weeknight meal.
Ingredients
- 200 g fresh udon noodles
- 100 g shabu shabu beef, thinly sliced
- 1/2 onion, sliced
- 1 tsp garlic, minced
- 1/2 tsp ginger, minced (optional)
- 1/4 cup dark soy sauce (or sweet soy sauce)
- 1 tsp oyster sauce
- 1 tbsp tomato paste
- 2 tsp black pepper (adjust to taste)
- 1 cup water
- 1 handful leafy greens (chye sim or similar)
- 1 tsp cornstarch mixed with water (slurry)
- Oil for cooking
Instructions
- Heat oil in a pan over medium heat and sauté onion, garlic, and ginger until fragrant.
- Add beef and cook until just browned.
- Stir in soy sauce, oyster sauce, tomato paste, and black pepper.
- Add water and mix to form a sauce.
- Add udon noodles and gently separate them in the sauce.
- Bring to a boil, then add leafy greens.
- Add cornstarch slurry gradually and stir until sauce thickens.
- Serve hot.
Notes
- Use fresh udon for best texture and chewiness.
- Adjust black pepper for more or less heat.
- You can replace beef with chicken or shrimp.
- Mix sauces beforehand for faster cooking.
