Description

Black Pepper Beef Udon is a quick and flavorful noodle stir-fry made with tender beef, chewy udon noodles, and a bold black pepper sauce. Ready in minutes, it’s the perfect comforting weeknight meal.


Ingredients

  • 200 g fresh udon noodles
  • 100 g shabu shabu beef, thinly sliced
  • 1/2 onion, sliced
  • 1 tsp garlic, minced
  • 1/2 tsp ginger, minced (optional)
  • 1/4 cup dark soy sauce (or sweet soy sauce)
  • 1 tsp oyster sauce
  • 1 tbsp tomato paste
  • 2 tsp black pepper (adjust to taste)
  • 1 cup water
  • 1 handful leafy greens (chye sim or similar)
  • 1 tsp cornstarch mixed with water (slurry)
  • Oil for cooking


Instructions

  1. Heat oil in a pan over medium heat and sauté onion, garlic, and ginger until fragrant.
  2. Add beef and cook until just browned.
  3. Stir in soy sauce, oyster sauce, tomato paste, and black pepper.
  4. Add water and mix to form a sauce.
  5. Add udon noodles and gently separate them in the sauce.
  6. Bring to a boil, then add leafy greens.
  7. Add cornstarch slurry gradually and stir until sauce thickens.
  8. Serve hot.

Notes

  • Use fresh udon for best texture and chewiness.
  • Adjust black pepper for more or less heat.
  • You can replace beef with chicken or shrimp.
  • Mix sauces beforehand for faster cooking.
