Description

Blueberry Mousse Heaven Cheesecake – a light, creamy, and berrylicious dessert featuring a buttery graham cracker crust, velvety cheesecake layer, and dreamy blueberry mousse topping. Perfect for celebrations or any indulgent craving!


Ingredients

For the Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Cheesecake Layer

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

For the Blueberry Mousse

  • 2 cups fresh blueberries
  • ½ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 packet unflavored gelatin
  • 2 cups heavy cream, whipped

For the Topping

  • Fresh blueberries
  • Whipped cream
  • Blueberry sauce (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9-inch springform pan with parchment paper or lightly grease it.
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of the pan. Bake for 8–10 minutes and let cool completely.
  3. For the cheesecake layer, beat cream cheese and sugar until smooth. Add eggs one at a time and vanilla extract; beat until fully combined. Pour over cooled crust and bake for 25–30 minutes. Cool to room temperature, then refrigerate for 1–2 hours.
  4. For the blueberry mousse, puree 1½ cups of blueberries with sugar and lemon juice. Bloom gelatin in 2 tbsp cold water, then melt gently and stir into the blueberry puree. Let it cool slightly.
  5. Fold whipped cream into the blueberry mixture gently to create a mousse. Spread mousse evenly over the chilled cheesecake layer.
  6. Refrigerate the cheesecake for at least 4 hours, or until mousse is set.
  7. Top with fresh blueberries, whipped cream, and blueberry sauce if desired before serving.

Notes

  • Use frozen blueberries if fresh are unavailable; thaw and drain excess liquid before using.
  • For a firmer mousse layer, chill gelatin mixture longer before folding in whipped cream.
  • To achieve cleaner slices, dip a knife in hot water and wipe between cuts.
