Ingredients

  • 1 cup (226 g) unsalted butter, softened
  • ½ cup (60 g) powdered sugar (plus more for rolling)
  • 2 cups (240 g) all-purpose flour
  • 1 cup (120 g) finely chopped pecans
  • 1 tsp vanilla extract
  • ¼ tsp salt


Instructions

  1. Preheat oven: Set oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter & sugar: In a large bowl, beat softened butter and ½ cup powdered sugar until light and fluffy. Stir in vanilla extract.
  3. Add dry ingredients: Mix in flour, chopped pecans, and salt until dough forms.
  4. Shape cookies: Roll dough into 1-inch balls and place on prepared baking sheets, spaced 2 inches apart.
  5. Bake: Bake for 12–15 minutes until the bottoms are lightly golden. Let cool for 5 minutes on the sheet.
  6. Coat in sugar: Roll warm cookies in powdered sugar. Once cooled completely, roll again for a thicker snowball coating.
