Ingredients
- 1 cup (226 g) unsalted butter, softened
- ½ cup (60 g) powdered sugar (plus more for rolling)
- 2 cups (240 g) all-purpose flour
- 1 cup (120 g) finely chopped pecans
- 1 tsp vanilla extract
- ¼ tsp salt
Instructions
- Preheat oven: Set oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter & sugar: In a large bowl, beat softened butter and ½ cup powdered sugar until light and fluffy. Stir in vanilla extract.
- Add dry ingredients: Mix in flour, chopped pecans, and salt until dough forms.
- Shape cookies: Roll dough into 1-inch balls and place on prepared baking sheets, spaced 2 inches apart.
- Bake: Bake for 12–15 minutes until the bottoms are lightly golden. Let cool for 5 minutes on the sheet.
- Coat in sugar: Roll warm cookies in powdered sugar. Once cooled completely, roll again for a thicker snowball coating.
