Description

This Caramelized Soy Chicken is sweet and savory, cooked in a rich garlic ginger broth and served over fluffy rice. Perfect for a cozy, comforting dinner, the chicken caramelizes beautifully for deep flavor that’s hard to resist.


Ingredients

  • 4 boneless, skinless chicken thighs (or breasts), cut into large chunks
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp brown sugar
  • 4 cloves garlic, minced
  • 2-inch piece fresh ginger, thinly sliced
  • 2 cups low-sodium chicken broth
  • 1 tbsp vegetable oil
  • 1 tsp sesame oil
  • 1 small onion, thinly sliced
  • 12 green onions, chopped (for garnish)
  • Cooked white rice, for serving
  • Optional: red chili flakes or fresh chili
  • Salt and pepper, to taste


Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add chicken pieces and sear for 4–5 minutes until golden brown on all sides.
  3. Reduce heat to medium and add onion, garlic, and ginger. Sauté for 2 minutes until fragrant.
  4. Sprinkle brown sugar over the chicken and stir continuously for about 3 minutes to caramelize.
  5. Pour in soy sauce and dark soy sauce, stirring well to coat the chicken.
  6. Add chicken broth and bring to a gentle simmer.
  7. Lower heat and cook for 10 minutes until chicken is fully cooked and flavors meld.
  8. Stir in sesame oil and season with salt and pepper to taste.
  9. Serve hot over cooked white rice and garnish with green onions.
