Cheese Chicken – Creamy, Cheesy, and Loaded with Broccoli

Description

An easy skillet meal with perfectly cooked chicken smothered in a creamy cheese sauce with broccoli. Serve over baked potatoes for a complete meal!


Ingredients

  • 6 strips thick-cut bacon, optional
  • 2 large boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 3 teaspoons Italian seasonings
  • ½ cup all-purpose flour
  • 4 tablespoons Parmesan cheese, finely shredded
  • 3-4 tablespoons olive oil
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 cup chicken broth
  • 2 cups milk
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon mustard powder
  • 1 teaspoon hot sauce
  • 2 ½ cups broccoli florets, finely chopped
  • 2 cups cheddar cheese, shredded
  • ¼ cup Parmesan cheese, finely shredded


Instructions

  1. Combine flour and Parmesan cheese and set aside. Prepare all other ingredients.
  2. Slice chicken into 2–3 thinner slices. Pound to ½ inch thick and pat dry.
  3. Season chicken with salt, pepper, and Italian seasoning. Dredge in flour mixture and tap off excess.
  4. Heat olive oil in a skillet over medium-high heat. Sauté chicken 4–5 minutes per side until golden brown. Remove and set aside. Repeat with remaining chicken.
  5. Wipe excess oil but leave fond. Melt butter and whisk in flour for 2 minutes.
  6. Add chicken broth and milk gradually, stirring continuously. Add seasonings, hot sauce, and broccoli.
  7. Bring sauce to a boil, reduce to gentle simmer 4–5 minutes until broccoli softens.
  8. Lower heat and stir in cheddar and Parmesan until combined.
  9. Add chicken back and spoon sauce over top. Heat 5 minutes uncovered. Garnish with bacon if desired and serve with baked potatoes.

Notes

  • Use 3–4 chicken breasts if smaller in size.
  • Use unsalted butter and low sodium chicken broth to control sodium.
  • Ensure sauce isn’t too hot when adding cheese to prevent separation.
  • Shred cheese from a block for best melt and flavor.
  • Optional: cook bacon and crumble on top, or use drippings for cooking chicken/roux.
