Description

Cheesy Chicken Broccoli Orzo is a creamy, one-pan comfort meal loaded with tender orzo, juicy chicken, and soft broccoli, all coated in melty cheddar and Parmesan. Quick, easy, and perfect for weeknights.


Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups cooked chicken, chopped
  • 2 cups broccoli florets, chopped small
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add the diced onion and cook until softened, about 3 minutes. Stir in the garlic and cook for 30 seconds.
  3. Add the orzo and cook for 1–2 minutes to lightly toast it.
  4. Pour in the chicken broth and milk, then add salt and pepper. Stir well.
  5. Add the chopped broccoli and bring to a gentle simmer.
  6. Cook for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  7. Stir in the cooked chicken, cheddar cheese, and Parmesan until melted and creamy.
  8. Remove from heat and serve warm.

Notes

  • Add crushed red pepper for a spicy version.
  • Use rotisserie chicken to save time.
  • Replace broccoli with peas or spinach if preferred.
