Cheesy Chicken Broccoli Orzo is a creamy, one-pan comfort meal loaded with tender orzo, juicy chicken, and soft broccoli, all coated in melty cheddar and Parmesan. Quick, easy, and perfect for weeknights.
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups cooked chicken, chopped
- 2 cups broccoli florets, chopped small
- 2 cups chicken broth
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil and butter in a large skillet over medium heat.
- Add the diced onion and cook until softened, about 3 minutes. Stir in the garlic and cook for 30 seconds.
- Add the orzo and cook for 1–2 minutes to lightly toast it.
- Pour in the chicken broth and milk, then add salt and pepper. Stir well.
- Add the chopped broccoli and bring to a gentle simmer.
- Cook for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
- Stir in the cooked chicken, cheddar cheese, and Parmesan until melted and creamy.
- Remove from heat and serve warm.
Notes
- Add crushed red pepper for a spicy version.
- Use rotisserie chicken to save time.
- Replace broccoli with peas or spinach if preferred.
