Description

Chicken Blueberry Feta Salad is a vibrant and refreshing dish combining juicy grilled chicken, sweet blueberries, creamy feta cheese, and crisp vegetables tossed with a tangy balsamic vinaigrette. Perfect for summer lunches, light dinners, or healthy meal prep, this colorful salad is packed with protein, antioxidants, and fresh flavor.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups spring mix greens
  • 1 1/4 cups blueberries
  • 1/2 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/2 cup chopped red onion
  • 1 cup chopped cucumber
  • 6 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 clove garlic, minced
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper


Instructions

  1. Prepare the vinaigrette by whisking together olive oil, balsamic vinegar, minced garlic, honey, salt, and pepper in a bowl or mason jar.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken over high heat for 6–8 minutes per side until cooked through (internal temperature 165°F).
  4. Allow the chicken to rest for a few minutes, then slice into strips.
  5. In a large salad bowl, arrange the spring mix greens.
  6. Top with blueberries, dried cranberries, chopped red onion, cucumber, and crumbled feta cheese.
  7. Add the sliced grilled chicken on top.
  8. Drizzle with balsamic vinaigrette just before serving and toss gently if desired.

Notes

  • Use halal chicken for a halal-friendly version.
  • For extra crunch, add toasted almonds or walnuts.
  • The vinaigrette can be made ahead and stored in the refrigerator for up to 3 days.
