Ingredients
- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots, thinly sliced
- 2 green onions, chopped
- 1/4 cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
Instructions
- Cook Lo Mein noodles according to package instructions. Drain and set aside.
- Slice chicken breasts into thin strips.
- Heat sesame oil in a large skillet or wok over medium-high heat. Add chicken and cook until no longer pink.
- Add minced garlic and sauté for 1 minute.
- Add bell peppers and carrots; stir-fry until tender-crisp.
- Add cooked noodles to the skillet.
- Pour soy sauce over the mixture and toss until everything is well coated and heated through.
- Stir in green onions and serve hot.

- Add a pinch of ginger for extra flavor.
- Use chili flakes or sriracha if you want it spicy.
