Description

A quick and flavorful Chicken Lo Mein loaded with tender chicken, colorful vegetables, and perfectly seasoned noodles tossed in a savory soy-sesame sauce.


Ingredients

  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced


Instructions

  1. Cook Lo Mein noodles according to package instructions. Drain and set aside.
  2. Slice chicken breasts into thin strips.
  3. Heat sesame oil in a large skillet or wok over medium-high heat. Add chicken and cook until no longer pink.
  4. Add minced garlic and sauté for 1 minute.
  5. Add bell peppers and carrots; stir-fry until tender-crisp.
  6. Add cooked noodles to the skillet.
  7. Pour soy sauce over the mixture and toss until everything is well coated and heated through.
  8. Stir in green onions and serve hot.

Notes

  • Add a pinch of ginger for extra flavor.
  • Use chili flakes or sriracha if you want it spicy.
