Description

Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup brewed coffee (cooled)
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup chocolate chips


Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with liners or grease lightly.
  2. In a large bowl, whisk brewed coffee, brown sugar, egg, vegetable oil, and vanilla extract until smooth.
  3. In another bowl, whisk flour, baking powder, and salt.
  4. Slowly add dry ingredients to wet ingredients and mix gently until just combined.
  5. Fold in chocolate chips, avoiding overmixing.
  6. Fill each muffin cup about 3/4 full with batter.
  7. Bake for 18–20 minutes or until a toothpick inserted comes out clean.
  8. Let cool for 5 minutes in the pan, then transfer to a wire rack.

Notes

  • Do not overmix the batter to keep muffins soft and fluffy.
  • Use room temperature coffee for best integration with other ingredients.
