Ingredients
- 1 3/4 cups all-purpose flour
- 3/4 cup brewed coffee (cooled)
- 1/2 cup brown sugar
- 1 large egg
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup chocolate chips
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with liners or grease lightly.
- In a large bowl, whisk brewed coffee, brown sugar, egg, vegetable oil, and vanilla extract until smooth.
- In another bowl, whisk flour, baking powder, and salt.
- Slowly add dry ingredients to wet ingredients and mix gently until just combined.
- Fold in chocolate chips, avoiding overmixing.
- Fill each muffin cup about 3/4 full with batter.
- Bake for 18–20 minutes or until a toothpick inserted comes out clean.
- Let cool for 5 minutes in the pan, then transfer to a wire rack.
Notes
