Chocolate Covered Strawberry Cookies are soft strawberry cake mix cookies dipped in chocolate for an easy and festive dessert, perfect for Valentine’s Day or any occasion.
Ingredients
- 1 box strawberry cake mix
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 2 eggs
- Chocolate chips or chocolate candy melts
- Sprinkles (optional)
Instructions
- Preheat oven to 350°F (325°F for dark or nonstick pans).
- In a large bowl, mix cake mix, vegetable oil, vanilla, and eggs until a dough forms.
- Refrigerate dough for 15–30 minutes.
- Shape dough into 1-inch balls and place 2 inches apart on ungreased cookie sheets.
- Bake for 9–12 minutes until tops look dry and bottoms are lightly golden.
- Cool 1 minute on the pan, then transfer to a cooling rack to cool completely.
- Dip or drizzle cookies with melted chocolate and add sprinkles if desired.
