Description
These Chocolate Lava Brownie Cookies combine the chewy edges of brownies with the molten centers of lava cakes. Each bite delivers a rich, fudgy explosion of warm chocolate — perfect for true chocolate lovers!
Ingredients
- Main Ingredients:
- 1 cup (240 ml) unsalted butter
- 1 cup (200 g) granulated sugar
- 1 cup (220 g) brown sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup (125 g) all-purpose flour
- 1 cup (175 g) semi-sweet chocolate chips (plus extra for topping)
- ½ tsp sea salt
Instructions
- Preheat oven: Heat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Melt butter & chocolate: In a microwave-safe bowl, melt butter with half the chocolate chips in 30-second intervals, stirring until smooth. Let cool slightly.
- Mix sugars & eggs: In a large bowl, whisk together granulated sugar, brown sugar, eggs, and vanilla until thick and glossy.
- Combine mixtures: Pour the melted chocolate mixture into the egg mixture and stir until combined.
- Add dry ingredients: Fold in flour and sea salt until just incorporated. Stir in the remaining chocolate chips.
- Scoop & chill: Scoop 2-tbsp portions of dough onto the baking sheet and chill for 15 minutes for fudgier centers.
- Bake: Bake 10–12 minutes, until edges are set but centers are still soft. Cookies will continue to set as they cool.
- Serve warm: Enjoy immediately for a lava-like center or let cool for dense, brownie-style cookies.
Notes
- For extra gooey centers, slightly underbake by 1 minute.
- Top with sea salt flakes before baking for a bakery-style finish.
- Store leftovers in an airtight container at room temperature for up to 4 days.
