Description
A decadent frozen dessert made with layers of rich chocolate cake, eggless cookie dough, creamy ice cream filling, and topped with M&M’s and chocolate chips.
Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 3/8 cup dark cocoa powder
- 1 teaspoon baking soda
- 1 large egg
- 1/2 cup buttermilk
- 1/2 cup vegetable oil
- 3/4 teaspoon vanilla extract
- 1/2 cup boiling water
- 6 tablespoons unsalted butter
- 1/2 cup packed brown sugar
- 1 cup heat-treated flour
- 1–2 teaspoons milk
- 1 cup mini chocolate chips, divided
- 8 ounces cream cheese, softened
- 1/8 cup milk
- 2 teaspoons vanilla extract
- 12–16 ounces Cool Whip, divided
- M&M’s for topping
- Chocolate sauce (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, mix flour, sugar, cocoa powder, and baking soda. Add egg, buttermilk, oil, and vanilla. Beat for 2 minutes.
- Stir in boiling water. Divide batter evenly between pans and bake for 30–35 minutes. Cool completely.
- Cream butter and brown sugar until fluffy. Mix in vanilla, flour, milk, and mini chocolate chips to form cookie dough.
- Beat cream cheese, brown sugar, milk, and vanilla until smooth. Fold in Cool Whip and mini chocolate chips.
- Place one cake layer on a plate. Spread half the cookie dough, then half the ice cream mixture. Repeat layers.
- Frost with remaining Cool Whip. Decorate with chocolate chips, chocolate sauce, and M&M’s.
- Freeze for at least 6 hours until firm. Slice and serve cold.
Notes
- Heat-treat flour to make cookie dough safe to eat.
- Let cake soften slightly before slicing for clean cuts.
