Description

Christmas Crack Cookies combine addictive toffee-covered saltine crackers with brown butter cookie dough, creating a sweet, crunchy, and chewy holiday treat that’s impossible to resist.


Ingredients

  • Christmas Crack:
  • 9 saltine crackers
  • 6 tbsp salted butter
  • 6 tbsp brown sugar
  • 3/4 cup (150g) chocolate chips
  • Cookie Dough:
  • 1 cup (222g) salted butter, browned
  • 1 cup (246g) brown sugar
  • 1/2 cup (115g) granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 1/4 cups (342g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Flakey sea salt, for garnish


Instructions

  1. Preheat oven to 400°F. Line a 9×9 pan with parchment paper and arrange saltine crackers in a single layer.
  2. In a small saucepan, combine 6 tbsp butter and 6 tbsp brown sugar. Bring to a boil without stirring, then boil 2 1/2 minutes. Pour over crackers.
  3. Bake 6 minutes. Remove from oven, sprinkle chocolate chips on top, wait 5 minutes, then spread evenly. Cool completely and freeze.
  4. Brown 1 cup butter over low heat until golden and nutty. Pour into a bowl.
  5. Add brown sugar and granulated sugar, mixing 1 minute. Then add eggs and vanilla, mixing until smooth.
  6. Mix in flour, baking soda, and salt until a soft dough forms.
  7. Chop chilled Christmas Crack into small pieces and fold into the cookie dough.
  8. Scoop 3 tbsp portions onto parchment-lined baking sheet. Sprinkle with flakey sea salt and rest 10 minutes.
  9. Bake at 350°F for 9–11 minutes until spread and no longer glossy. Cool on pan and enjoy!
