Description
Churu Chicken Amarillo is a creamy, spicy Peruvian dish made with aji amarillo chili paste, tender chicken, and a luscious sauce. Perfect for family meals or special occasions.
Ingredients
- 1.5 pounds boneless, skinless chicken thighs or breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 tablespoons aji amarillo paste
- 1 medium yellow onion, finely diced
- 3 garlic cloves, minced
- ½ cup chicken broth
- ½ cup heavy cream or evaporated milk
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- Optional: ¼ teaspoon sugar
- Fresh cilantro, chopped (for garnish)
- Cooked white rice or quinoa (for serving)
- Fried plantains (for serving)
Instructions
- Season chicken with salt and pepper, let sit 10 minutes.
- Heat olive oil in skillet over medium-high heat; cook chicken 4–5 min per side until golden. Remove and set aside.
- Sauté onions until translucent. Add garlic and cumin, cook until fragrant.
- Stir in aji amarillo paste, cook 2 min. Add chicken broth, scraping browned bits.
- Pour in cream and stir until smooth. Simmer 5 minutes.
- Return chicken to skillet, spoon sauce over it, simmer 5 minutes until flavors meld.
- Garnish with fresh cilantro and serve with rice or plantains.
Notes
- Adjust spice level with more or less aji amarillo paste or cream.
- Can be made ahead by preparing sauce in advance and reheating before serving.
