Description

A delicious no-bake classic fresh strawberry pie that is perfect for summer gatherings.


Ingredients

  • 1 pre-baked 9-inch pie crust (homemade or store-bought)
  • 1 ½ to 2 lbs fresh strawberries, hulled and halved/whole
  • 1 cup granulated sugar
  • 3 tbsp cornstarch
  • 1 cup water
  • 3 tbsp strawberry gelatin (or strawberry Jell-O powder)
  • 1 tsp lemon juice (optional)
  • Fresh whipped cream or whipped topping


Instructions

  1. Bake pie crust if needed and cool completely.
  2. In a saucepan, whisk sugar and cornstarch. Slowly add water while whisking. Cook over medium heat until thickened and clear, about 5 minutes.
  3. Stir in strawberry gelatin and lemon juice. Remove from heat and cool slightly.
  4. Arrange strawberries in pie crust. Pour glaze over berries to coat evenly.
  5. Chill pie in refrigerator at least 2 hours until set.
  6. Garnish with whipped cream before serving.
