Description
A delicious no-bake classic fresh strawberry pie that is perfect for summer gatherings.
Ingredients
- 1 pre-baked 9-inch pie crust (homemade or store-bought)
- 1 ½ to 2 lbs fresh strawberries, hulled and halved/whole
- 1 cup granulated sugar
- 3 tbsp cornstarch
- 1 cup water
- 3 tbsp strawberry gelatin (or strawberry Jell-O powder)
- 1 tsp lemon juice (optional)
- Fresh whipped cream or whipped topping
Instructions
- Bake pie crust if needed and cool completely.
- In a saucepan, whisk sugar and cornstarch. Slowly add water while whisking. Cook over medium heat until thickened and clear, about 5 minutes.
- Stir in strawberry gelatin and lemon juice. Remove from heat and cool slightly.
- Arrange strawberries in pie crust. Pour glaze over berries to coat evenly.
- Chill pie in refrigerator at least 2 hours until set.
- Garnish with whipped cream before serving.

- Use fresh strawberries for best flavor.
- Gluten-free option: use a gluten-free pie crust.
- Pie can be made a day in advance and refrigerated.
