Description
This Comforting Colcannon Soup is a rich, creamy, and cozy Irish-inspired dish made with tender potatoes, green cabbage, kale, leeks, and onions. Blended to your preferred consistency and finished with milk, butter, and a hint of nutmeg, this hearty soup is perfect for chilly evenings and comforting family dinners.
Ingredients
- 4 medium potatoes, peeled and diced
- 1 cup green cabbage, finely chopped
- 1 cup kale, stems removed and chopped
- 1 medium leek, sliced
- 1 onion, diced
- 3 cups vegetable broth
- 2 cups milk or plant-based milk
- 4 tablespoons butter or vegan substitute
- Salt, to taste
- Black pepper, to taste
- 1/2 teaspoon nutmeg
- 2 green onions, sliced, for garnish
Instructions
- In a large pot over medium heat, melt the butter until bubbly and fragrant.
- Add the diced onion and sliced leek. Cook for about 5 minutes, stirring occasionally, until softened and translucent.
- Add the diced potatoes and stir for another 3 minutes to coat them in the buttery onion and leek mixture.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low and add the chopped cabbage and kale. Simmer for 15–20 minutes, or until the potatoes are fork-tender.
- Use an immersion blender to puree the soup to your desired consistency, leaving some potato chunks if you prefer a heartier texture.
- Stir in the milk and season with salt, black pepper, and nutmeg. Heat gently for about 5 minutes without allowing the soup to boil.
- Ladle the soup into bowls and garnish with sliced green onions. Serve warm.
Notes
- For a creamier soup, use whole milk instead of plant-based milk.
- For a vegan version, use plant-based milk and a vegan butter substitute.
- Adjust the amount of blending to your preference. Blend completely for a smooth soup or leave some potato chunks for extra texture.
- Add a little extra vegetable broth or milk if the soup becomes too thick.
- Store leftovers in an airtight container in the refrigerator and reheat gently, stirring occasionally.
