Description

This vegetarian lentil casserole offers a hearty, nutritious, and comforting meal perfect for chilly nights. Made in one cozy pot, it’s easy to prepare and full of flavor.


Ingredients

  • 1 cup green lentils, rinsed
  • 2 cups potatoes, chopped
  • 1 cup carrot, chopped
  • 1 cup green peas, fresh or frozen
  • 1 cup celery, chopped
  • 1 medium red onion, chopped
  • 3 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 tbsp dried oregano
  • 1 tsp red chili flakes (optional)
  • Salt and ground black pepper, to taste
  • 2 cups vegetable stock (low-sodium recommended)
  • 1 cup melting cheese (vegan option available)


Instructions

  1. Rinse green lentils thoroughly and place in a 9×13 baking dish.
  2. Layer chopped vegetables, minced garlic, oregano, diced tomatoes, and vegetable stock.
  3. Mix all ingredients together until well combined.
  4. Cover tightly with aluminum foil and bake at 200°C (375°F) for 1.5 hours, stirring halfway through.
  5. Uncover and sprinkle shredded cheese on top. Bake an additional 15 minutes until melted and bubbly.
  6. Garnish with fresh parsley before serving.
