Ingredients
- 1 cup green lentils, rinsed
- 2 cups potatoes, chopped
- 1 cup carrot, chopped
- 1 cup green peas, fresh or frozen
- 1 cup celery, chopped
- 1 medium red onion, chopped
- 3 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1 tbsp dried oregano
- 1 tsp red chili flakes (optional)
- Salt and ground black pepper, to taste
- 2 cups vegetable stock (low-sodium recommended)
- 1 cup melting cheese (vegan option available)
Instructions
- Rinse green lentils thoroughly and place in a 9×13 baking dish.
- Layer chopped vegetables, minced garlic, oregano, diced tomatoes, and vegetable stock.
- Mix all ingredients together until well combined.
- Cover tightly with aluminum foil and bake at 200°C (375°F) for 1.5 hours, stirring halfway through.
- Uncover and sprinkle shredded cheese on top. Bake an additional 15 minutes until melted and bubbly.
- Garnish with fresh parsley before serving.

- For extra flavor, drizzle with olive oil before serving.
