Description

This delightful Cookies and Cream Cheesecake Roll combines the rich flavors of chocolate sandwich cookies and creamy cheesecake in a fun and easy-to-make dessert.


Ingredients

  • 1 cup Chocolate sandwich cookies, crushed
  • 2 cups Cream cheese, softened
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy cream
  • 1/2 cup Chocolate chips, melted
  • 1/2 cup Crushed chocolate sandwich cookies for topping


Instructions

  1. Preheat oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper, leaving overhang.
  2. Combine crushed chocolate sandwich cookies and softened cream cheese in a mixing bowl until smooth.
  3. In another bowl, whip heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, whipping until stiff peaks form.
  4. Gently fold whipped cream into the cream cheese mixture until fully incorporated.
  5. Spread the cheesecake mixture evenly over the prepared cake layer.
  6. Roll cake tightly from the short side using parchment paper.
  7. Wrap tightly in plastic wrap and refrigerate at least 4 hours or until set.
  8. Melt chocolate chips in microwave in 30-second intervals, stirring until smooth.
  9. Unwrap cheesecake roll, place on serving platter, drizzle melted chocolate on top, and sprinkle with crushed cookies.
  10. Slice and serve chilled.
