Ingredients
- 1 cup Chocolate sandwich cookies, crushed
- 2 cups Cream cheese, softened
- 1 cup Powdered sugar
- 1 teaspoon Vanilla extract
- 1 cup Heavy cream
- 1/2 cup Chocolate chips, melted
- 1/2 cup Crushed chocolate sandwich cookies for topping
Instructions
- Preheat oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper, leaving overhang.
- Combine crushed chocolate sandwich cookies and softened cream cheese in a mixing bowl until smooth.
- In another bowl, whip heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, whipping until stiff peaks form.
- Gently fold whipped cream into the cream cheese mixture until fully incorporated.
- Spread the cheesecake mixture evenly over the prepared cake layer.
- Roll cake tightly from the short side using parchment paper.
- Wrap tightly in plastic wrap and refrigerate at least 4 hours or until set.
- Melt chocolate chips in microwave in 30-second intervals, stirring until smooth.
- Unwrap cheesecake roll, place on serving platter, drizzle melted chocolate on top, and sprinkle with crushed cookies.
- Slice and serve chilled.
