This delicious and easy-to-make crustless quiche features creamy cottage cheese and fresh spinach, perfect for breakfast or brunch.
Ingredients
- 1 cup Cottage Cheese
- 4 Large Eggs
- 1 cup Fresh Spinach, chopped
- 1 cup Shredded Cheese (Cheddar or Mozzarella)
- 1/2 cup Milk
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 1 tablespoon Olive Oil or Butter (for greasing)
Instructions
- Preheat oven to 350°F (175°C).
- Grease a 9-inch pie dish or quiche pan with olive oil or butter.
- In a large mixing bowl, combine cottage cheese, eggs, and milk. Whisk until smooth.
- Stir in garlic powder, onion powder, salt, and black pepper.
- Gently fold in chopped spinach and shredded cheese.
- Pour mixture into prepared pie dish, spreading evenly.
- Bake for 30–35 minutes, until top is golden and a knife comes out clean.
- Let cool slightly before slicing and serving warm or at room temperature.
Notes
- For added flavor, mix in chopped onions or bell peppers.
- Can be stored in the refrigerator for up to 3 days.
