Description

Golden, crispy smashed burrito tacos stuffed with creamy cheesy chicken, bold garlic cowboy butter, melty layers, and toasty tortillas with irresistible crunch.


Ingredients

  • For the Cheesy Chicken Filling
  • 3 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1 cup shredded Monterey Jack
  • 1 cup shredded cheddar
  • 3 cloves garlic, minced
  • 2 jalapeños, finely diced (optional)
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • ¼ tsp chili flakes
  • Salt & pepper to taste
  • For the Cowboy Butter
  • 6 tbsp melted butter
  • 3 cloves garlic, finely grated
  • 1 tbsp chopped parsley
  • 1 tsp Dijon mustard
  • ½ tsp smoked paprika
  • ¼ tsp cayenne
  • ½ tsp dried oregano
  • ½ tsp flaky salt
  • For the Smashed Burrito Tacos
  • 8 medium flour tortillas
  • 2 cups shredded mozzarella
  • Oil or butter for the skillet
  • For the Finishing Drizzle
  • 2 tbsp leftover cowboy butter
  • 1 tsp hot honey
  • ½ tsp smoked paprika
  • Optional Add-Ons
  • Pickled jalapeños
  • Shredded lettuce
  • Fresh cilantro
  • Chipotle crema or ranch for dipping
  • Crispy fried onions


Instructions

  1. Make the Cheesy Chicken Filling: In a bowl, combine shredded chicken, cream cheese, Monterey Jack, cheddar, garlic, jalapeños, smoked paprika, onion powder, chili flakes, salt, and pepper. Stir until creamy and thick.
  2. Prepare the Cowboy Butter: Whisk melted butter with garlic, parsley, Dijon, smoked paprika, cayenne, oregano, and flaky salt until glossy. Set aside.
  3. Assemble the Smashed Burrito Tacos: Heat skillet over medium-high. Place a tortilla in skillet and spoon a generous amount of filling on one half. Top with mozzarella, fold in half, and gently smash with a spatula.
  4. Crisp & Melt: Cook 2–3 minutes per side until golden brown, crispy, and cheese is melty. Brush with cowboy butter after flipping. Repeat with all tortillas.
  5. Finish with Drizzle: Mix leftover cowboy butter with hot honey and smoked paprika. Drizzle over hot tacos.
  6. Serve: Serve warm with cilantro, extra jalapeños, shredded lettuce, and chipotle crema or ranch. Expect buttery crisp edges, creamy cheesy centers, and bold cowboy butter flavor in every bite.
