Description

Ingredients

  • 4 large russet potatoes, peeled and diced
  • 2 cups chili (canned or homemade)
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • 1 tablespoon olive oil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil diced potatoes until tender, about 15 minutes. Drain and set aside.
  3. In a mixing bowl, combine potatoes, chili, garlic powder, onion powder, salt, and pepper.
  4. Transfer mixture to a greased 9×13 inch baking dish.
  5. Top with shredded cheddar cheese.
  6. Bake 25–30 minutes, or until cheese is bubbly and golden.
  7. Remove from oven, serve with sour cream, and garnish with green onions.
