Ingredients
- 4 large russet potatoes, peeled and diced
- 2 cups chili (canned or homemade)
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Green onions, chopped (for garnish)
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Boil diced potatoes until tender, about 15 minutes. Drain and set aside.
- In a mixing bowl, combine potatoes, chili, garlic powder, onion powder, salt, and pepper.
- Transfer mixture to a greased 9×13 inch baking dish.
- Top with shredded cheddar cheese.
- Bake 25–30 minutes, or until cheese is bubbly and golden.
- Remove from oven, serve with sour cream, and garnish with green onions.
