For the Soup:

 - 1 small onion, finely chopped
 - 1 large carrot, sliced thin
 - 2 cloves garlic, minced
 - 6 cups chicken broth (halal)
 - 2 tbsp soy sauce
 - 1 tsp sesame oil
 - 1 cup baby spinach (optional)
 - Salt and pepper, to taste
 - Green onions, for garnish

Instructions
- Make the Dumpling Dough: In a bowl, mix flour and salt. Gradually add warm water and oil, stirring until a soft dough forms. Knead for 2–3 minutes, cover, and let rest for 20 minutes.
 - Prepare the Filling: In a separate bowl, combine ground chicken, soy sauce, sesame oil, ginger, garlic, green onion, salt, and pepper. Mix well until combined.
 - Assemble the Dumplings: Roll the rested dough into a thin sheet. Cut into small circles (about 3 inches wide). Place 1 tsp of filling in each circle, fold, and seal the edges tightly.
 - Cook the Soup Base: In a large pot, heat vegetable oil over medium heat. Add onion, carrot, and garlic; sauté for 3–4 minutes until fragrant.
 - Add Broth & Seasonings: Pour in chicken broth, soy sauce, sesame oil, salt, and pepper. Bring to a gentle boil.
 - Cook the Dumplings: Carefully drop dumplings into the simmering soup. Cook for 8–10 minutes until they float and the filling is cooked through.
 - Finish the Soup: Add spinach and cook for another minute until wilted. Taste and adjust seasoning.
 - Serve: Ladle soup into bowls, garnish with chopped green onions, and enjoy warm!
