Description

A rich and creamy pasta dish made with ripe avocados, garlic, and fresh basil, perfect for a quick and delicious meal.


Ingredients

  • 2 whole ripe avocados, pitted and peeled
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 cup fresh basil leaves, packed
  • 1/4 cup grated Parmesan cheese (or nutritional yeast for vegan)
  • Salt and freshly cracked black pepper, to taste
  • 12 oz pasta (spaghetti or fettuccine recommended)
  • 1/4 cup olive oil (plus more for drizzling)
  • Cherry tomatoes, halved, for garnish (as needed)
  • Extra fresh basil leaves, for garnish (as needed)


Instructions

  1. Bring salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1 cup pasta water before draining. Drain pasta and set aside in a large mixing bowl.
  2. In a food processor, combine avocados, garlic, lemon juice, basil, and Parmesan cheese. Process until smooth. Add reserved pasta water gradually for desired sauce consistency.
  3. Pour creamy avocado sauce over drained pasta and gently toss until well-coated. Adjust sauce thickness with more pasta water if needed.
  4. Drizzle olive oil over pasta and season with salt and freshly cracked black pepper. Toss again to combine.
  5. Serve onto plates, garnish with halved cherry tomatoes and extra basil leaves, and drizzle with additional olive oil if desired.

  • Use nutritional yeast for a vegan version.
