Description
A rich and creamy pasta dish made with ripe avocados, garlic, and fresh basil, perfect for a quick and delicious meal.
Ingredients
- 2 whole ripe avocados, pitted and peeled
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 cup fresh basil leaves, packed
- 1/4 cup grated Parmesan cheese (or nutritional yeast for vegan)
- Salt and freshly cracked black pepper, to taste
- 12 oz pasta (spaghetti or fettuccine recommended)
- 1/4 cup olive oil (plus more for drizzling)
- Cherry tomatoes, halved, for garnish (as needed)
- Extra fresh basil leaves, for garnish (as needed)
Instructions
- Bring salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1 cup pasta water before draining. Drain pasta and set aside in a large mixing bowl.
- In a food processor, combine avocados, garlic, lemon juice, basil, and Parmesan cheese. Process until smooth. Add reserved pasta water gradually for desired sauce consistency.
- Pour creamy avocado sauce over drained pasta and gently toss until well-coated. Adjust sauce thickness with more pasta water if needed.
- Drizzle olive oil over pasta and season with salt and freshly cracked black pepper. Toss again to combine.
- Serve onto plates, garnish with halved cherry tomatoes and extra basil leaves, and drizzle with additional olive oil if desired.

- Use nutritional yeast for a vegan version.
- Reserve pasta water carefully to adjust sauce consistency.
