Description

This Creamy Chicken Broccoli Rice Cheese Casserole is a comforting, cheesy one-dish meal loaded with tender chicken, fresh broccoli, and fluffy rice — perfect for busy weeknights.


Ingredients

  • 2 cups cooked chicken, diced
  • 2 cups broccoli florets
  • 2 cups cooked rice
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup milk
  • ¼ cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup crispy fried onions (optional, for topping)


Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine cooked chicken, broccoli florets, cooked rice, and 1½ cups of shredded cheddar cheese.
  3. In a separate bowl, whisk together cream of chicken soup, milk, sour cream, garlic powder, onion powder, salt, and black pepper.
  4. Pour the soup mixture over the chicken, broccoli, and rice. Stir until well combined.
  5. Transfer mixture to the prepared baking dish. Sprinkle remaining ½ cup shredded cheddar cheese on top.
  6. Bake uncovered for 25–30 minutes, until hot and bubbly. For extra crunch, sprinkle crispy fried onions on top during the last 5 minutes of baking.
  7. Let stand for a few minutes before serving.

Notes

  • Frozen broccoli can be used — just thaw and drain excess water.
