This Creamy Chicken Broccoli Rice Cheese Casserole is a comforting, cheesy one-dish meal loaded with tender chicken, fresh broccoli, and fluffy rice — perfect for busy weeknights.
Ingredients
- 2 cups cooked chicken, diced
- 2 cups broccoli florets
- 2 cups cooked rice
- 2 cups shredded cheddar cheese
- 1 can (10.5 oz) cream of chicken soup
- ½ cup milk
- ¼ cup sour cream
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup crispy fried onions (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- In a large bowl, combine cooked chicken, broccoli florets, cooked rice, and 1½ cups of shredded cheddar cheese.
- In a separate bowl, whisk together cream of chicken soup, milk, sour cream, garlic powder, onion powder, salt, and black pepper.
- Pour the soup mixture over the chicken, broccoli, and rice. Stir until well combined.
- Transfer mixture to the prepared baking dish. Sprinkle remaining ½ cup shredded cheddar cheese on top.
- Bake uncovered for 25–30 minutes, until hot and bubbly. For extra crunch, sprinkle crispy fried onions on top during the last 5 minutes of baking.
- Let stand for a few minutes before serving.
Notes
- Frozen broccoli can be used — just thaw and drain excess water.
- Leftovers store well in the refrigerator for up to 3 days.
