Ingredients

  • 1 cup orzo pasta
  • 2 cups cooked and shredded chicken
  • 1 cup mixed vegetables (carrots, peas, celery)
  • 1 cup heavy cream (or half-and-half/milk)
  • 2 cups chicken broth (or vegetable broth for vegetarian)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dried thyme


Instructions

  1. In a large pot, melt butter or oil over medium heat. Sauté diced carrots, celery, and peas for about 5 minutes until tender.
  2. Stir in shredded chicken and orzo. Add chicken broth and cream, mixing well. Cook for about 2 minutes.
  3. Reduce heat to low, cover, and simmer for 10–15 minutes, stirring occasionally.
