Ingredients
- 1 cup orzo pasta
- 2 cups cooked and shredded chicken
- 1 cup mixed vegetables (carrots, peas, celery)
- 1 cup heavy cream (or half-and-half/milk)
- 2 cups chicken broth (or vegetable broth for vegetarian)
- 1 tsp salt
- 1 tsp pepper
- 1 tsp dried thyme
Instructions
- In a large pot, melt butter or oil over medium heat. Sauté diced carrots, celery, and peas for about 5 minutes until tender.
- Stir in shredded chicken and orzo. Add chicken broth and cream, mixing well. Cook for about 2 minutes.
- Reduce heat to low, cover, and simmer for 10–15 minutes, stirring occasionally.
- Remove from heat, season with salt, pepper, and thyme to taste.
- Let rest for 2 minutes, then serve hot, optionally garnished with fresh herbs.
