Ingredients

  • 3 tbsp unsalted butter
  • 1 medium onion, diced
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp smoked paprika
  • 1 tbsp sweet paprika
  • 2 tbsp flour (gluten-free if needed)
  • 2 cups low-sodium vegetable broth
  • 1 cup sour cream (or vegan alternative)
  • Salt and pepper, to taste


Instructions

  1. Melt butter in a large skillet over medium heat until bubbly.
  2. Sauté diced onion until soft and golden, about 5 minutes.
  3. Add sliced mushrooms and cook for 8 minutes until tender.
  4. Stir in minced garlic and both types of paprika for 30 seconds.
  5. Sprinkle flour and mix, then pour in vegetable broth, scraping the pan.
  6. Let sauce bubble for 5 minutes until thickened.
  7. Lower heat, add sour cream, and blend until creamy. Adjust seasoning with salt and pepper.
  8. Remove from heat and serve immediately.
