Ingredients
- 3 tbsp unsalted butter
- 1 medium onion, diced
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 2 tbsp smoked paprika
- 1 tbsp sweet paprika
- 2 tbsp flour (gluten-free if needed)
- 2 cups low-sodium vegetable broth
- 1 cup sour cream (or vegan alternative)
- Salt and pepper, to taste
Instructions
- Melt butter in a large skillet over medium heat until bubbly.
- Sauté diced onion until soft and golden, about 5 minutes.
- Add sliced mushrooms and cook for 8 minutes until tender.
- Stir in minced garlic and both types of paprika for 30 seconds.
- Sprinkle flour and mix, then pour in vegetable broth, scraping the pan.
- Let sauce bubble for 5 minutes until thickened.
- Lower heat, add sour cream, and blend until creamy. Adjust seasoning with salt and pepper.
- Remove from heat and serve immediately.
