Description
An easy low-carb healthy one-pan dish with chicken breasts, broccoli, grape tomatoes, and sun-dried tomatoes in a creamy Italian-inspired sauce. Perfect for a family dinner!
Ingredients
- 1 lb chicken breasts, boneless and skinless
- 2 cups broccoli, chopped
- 1 cup grape tomatoes, halved
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 4 cloves garlic, minced
- 2 tsp Italian seasoning
- 1/2 cup Parmesan cheese, shredded
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts and cook 5-7 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, sauté garlic and broccoli for 3 minutes until fragrant and slightly softened.
- Add grape tomatoes and sun-dried tomatoes, cooking 2-3 more minutes until tomatoes release their juices.
- Whisk in heavy cream and Italian seasoning. Stir gently until the sauce thickens and bubbles (~2 minutes).
- Return chicken to skillet, coat with sauce and vegetables, and simmer 3 minutes.
- Top with shredded Parmesan cheese and let melt before serving.
Notes
- Add a pinch of red pepper flakes while sautéing garlic for a mild kick.
