Description

An easy low-carb healthy one-pan dish with chicken breasts, broccoli, grape tomatoes, and sun-dried tomatoes in a creamy Italian-inspired sauce. Perfect for a family dinner!


Ingredients

  • 1 lb chicken breasts, boneless and skinless
  • 2 cups broccoli, chopped
  • 1 cup grape tomatoes, halved
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 1/2 cup Parmesan cheese, shredded
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts and cook 5-7 minutes per side until golden and cooked through. Remove and set aside.
  2. In the same skillet, sauté garlic and broccoli for 3 minutes until fragrant and slightly softened.
  3. Add grape tomatoes and sun-dried tomatoes, cooking 2-3 more minutes until tomatoes release their juices.
  4. Whisk in heavy cream and Italian seasoning. Stir gently until the sauce thickens and bubbles (~2 minutes).
  5. Return chicken to skillet, coat with sauce and vegetables, and simmer 3 minutes.
  6. Top with shredded Parmesan cheese and let melt before serving.

  • Add a pinch of red pepper flakes while sautéing garlic for a mild kick.
