Description

This creamy mushroom soup is comforting, rich, and perfect for busy days. With simple ingredients and deep mushroom flavor, it feels gourmet without the effort.


Ingredients

  • 1 pound mushrooms, sliced
  • 4 tablespoons butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, melt butter over medium heat. Add onion and garlic; sauté until translucent.
  2. Add sliced mushrooms and cook 5 minutes until softened and lightly browned.
  3. Pour in broth and bring to a boil. Reduce heat and simmer 15–20 minutes.
  4. Blend with an immersion or regular blender until smooth.
  5. Return soup to pot, stir in heavy cream and thyme. Season with salt and pepper.
  6. Simmer 5 more minutes. Adjust consistency with more broth if needed.
  7. Serve hot, garnished with fresh parsley.

Notes
