Ingredients
- 1 pound mushrooms, sliced
- 4 tablespoons butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 1 teaspoon thyme leaves
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt butter over medium heat. Add onion and garlic; sauté until translucent.
- Add sliced mushrooms and cook 5 minutes until softened and lightly browned.
- Pour in broth and bring to a boil. Reduce heat and simmer 15–20 minutes.
- Blend with an immersion or regular blender until smooth.
- Return soup to pot, stir in heavy cream and thyme. Season with salt and pepper.
- Simmer 5 more minutes. Adjust consistency with more broth if needed.
- Serve hot, garnished with fresh parsley.
