Description

Creamy Parmesan Chicken Rigatoni is a comforting pasta dish combining tender chicken, al dente rigatoni, and a rich creamy sauce made with Parmesan and cheddar cheeses, garlic, and aromatic seasonings. Perfect for weeknight dinners or family gatherings.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1 lb rigatoni pasta
  • Salt to taste
  • Optional: chopped chives for garnish


Instructions

  1. Cook rigatoni according to package instructions until al dente. Drain and set aside.
  2. Combine cubed chicken with olive oil, Cajun seasoning, smoked paprika, garlic powder, and black pepper in a bowl.
  3. Heat 2 tablespoons butter in a skillet over medium-high heat. Brown chicken for 6–8 minutes. Remove from skillet.
  4. Melt remaining butter in the same skillet and sauté minced garlic until fragrant.
  5. Whisk in flour to make a roux, cooking for about 1 minute.
  6. Gradually add milk and chicken broth, stirring until smooth. Bring to a simmer.
  7. Stir in Parmesan and cheddar cheese until melted and creamy. Season with salt.
  8. Add cooked rigatoni and chicken to the sauce. Toss to combine.
  9. Serve immediately, garnished with chopped chives if desired.
