Description
Creamy Parmesan Rice is a rich and comforting side dish made with buttery rice, milk, and parmesan cheese. It’s quick, easy, and pairs perfectly with chicken, seafood, or beef for a satisfying meal.
Ingredients
- 1 cup long grain white rice (not brown or quick cook rice)
- 4 tablespoons butter
- 1 small onion, finely diced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt, or to taste
- 1 1/4 cups chicken stock or chicken broth
- 1 1/2 cups milk, divided
- 1 tablespoon lemon juice
- Zest from half a lemon
- 1/2 cup finely grated parmesan cheese
- 1 tablespoon fresh parsley, chopped
Instructions
- Melt butter in a medium saucepan or Dutch oven over medium heat. Add diced onion and cook for 2–3 minutes until softened but not browned.
- Add uncooked rice, garlic powder, and salt. Stir to coat the rice with butter and cook for 1 minute.
- Pour in the chicken stock and 1 1/4 cups of the milk, reserving the remaining 1/4 cup.
- Cover and bring to a boil over medium-high heat.
- Reduce heat to low and simmer for about 20 minutes covered, stirring occasionally, until the rice is tender.
- Turn off the heat and stir in the remaining 1/4 cup milk, lemon juice, lemon zest, parmesan cheese, and half of the parsley.
- Taste and adjust salt if needed. Garnish with the remaining parsley and serve immediately.
Notes
- Cooking time may vary depending on the size of the pan used.
- If the rice is not tender after 20 minutes, cook for an additional 1–2 minutes.
