Description

Creamy Parmesan Rice is a rich and comforting side dish made with buttery rice, milk, and parmesan cheese. It’s quick, easy, and pairs perfectly with chicken, seafood, or beef for a satisfying meal.


Ingredients

  • 1 cup long grain white rice (not brown or quick cook rice)
  • 4 tablespoons butter
  • 1 small onion, finely diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt, or to taste
  • 1 1/4 cups chicken stock or chicken broth
  • 1 1/2 cups milk, divided
  • 1 tablespoon lemon juice
  • Zest from half a lemon
  • 1/2 cup finely grated parmesan cheese
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Melt butter in a medium saucepan or Dutch oven over medium heat. Add diced onion and cook for 2–3 minutes until softened but not browned.
  2. Add uncooked rice, garlic powder, and salt. Stir to coat the rice with butter and cook for 1 minute.
  3. Pour in the chicken stock and 1 1/4 cups of the milk, reserving the remaining 1/4 cup.
  4. Cover and bring to a boil over medium-high heat.
  5. Reduce heat to low and simmer for about 20 minutes covered, stirring occasionally, until the rice is tender.
  6. Turn off the heat and stir in the remaining 1/4 cup milk, lemon juice, lemon zest, parmesan cheese, and half of the parsley.
  7. Taste and adjust salt if needed. Garnish with the remaining parsley and serve immediately.

Notes

  • Cooking time may vary depending on the size of the pan used.
  • If the rice is not tender after 20 minutes, cook for an additional 1–2 minutes.
