Description

Creamy Pepperoncini Chicken Skillet is a quick, flavorful dish with tender chicken, tangy pepperoncini, and creamy Parmesan sauce—perfect for weeknight dinners or meal prep.


Ingredients

  • 2 tbsp butter
  • 2 lbs chicken, cut into thin strips
  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • 1/2 cup chicken stock
  • 1/2 cup roasted red pepper, drained and sliced
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • 1/2 cup pepperoncini peppers, drained (sliced or whole)


Instructions

  1. Season chicken strips with salt and pepper.
  2. Melt butter in a skillet over medium-high heat. Cook chicken until browned on all sides. Remove and set aside.
  3. Sauté onions and garlic in the same skillet until fragrant and golden.
  4. Add chicken stock and roasted red peppers. Reduce by half.
  5. Turn off heat. Stir in heavy cream and Parmesan cheese until smooth.
  6. Return to medium heat. Add Italian seasoning and pepperoncini. Stir well.
  7. Add chicken back and simmer until fully cooked and sauce thickens. Serve hot over rice, vegetables, or pasta.
