Ingredients
- 2 tbsp butter
- 2 lbs chicken, cut into thin strips
- 1 tsp sea salt
- 1 tsp ground black pepper
- 1 white onion, diced
- 2 tbsp garlic, diced
- 1/2 cup chicken stock
- 1/2 cup roasted red pepper, drained and sliced
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, shredded
- 1 tbsp Italian seasoning
- 1/2 cup pepperoncini peppers, drained (sliced or whole)
Instructions
- Season chicken strips with salt and pepper.
- Melt butter in a skillet over medium-high heat. Cook chicken until browned on all sides. Remove and set aside.
- Sauté onions and garlic in the same skillet until fragrant and golden.
- Add chicken stock and roasted red peppers. Reduce by half.
- Turn off heat. Stir in heavy cream and Parmesan cheese until smooth.
- Return to medium heat. Add Italian seasoning and pepperoncini. Stir well.
- Add chicken back and simmer until fully cooked and sauce thickens. Serve hot over rice, vegetables, or pasta.
