Ingredients
- 12 oz penne pasta
- 2 boneless, skinless chicken breasts
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 cup bell peppers, sliced (red, green, or mix)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook penne until al dente. Drain and set aside.
- Season the Chicken: Sprinkle Cajun seasoning evenly over chicken breasts.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken 6–7 minutes per side until fully cooked. Remove and let rest before slicing.
- Sauté Vegetables: In the same skillet, add onion and bell peppers. Cook 3–4 minutes until tender. Stir in garlic and cook 1 minute until fragrant.
- Make the Sauce: Add heavy cream and chicken broth. Simmer 5–6 minutes until slightly thickened.
- Combine Pasta and Sauce: Add cooked pasta and sliced chicken. Toss to combine and sprinkle with Parmesan cheese. Season with salt and pepper to taste.
- Serve: Garnish with fresh parsley and extra Parmesan if desired. Serve immediately.
