Description

Creamy Rotel Chicken Pasta is a rich and comforting dish featuring tender chicken, sautéed vegetables, and penne pasta in a creamy Cajun-inspired sauce with Parmesan cheese.


Ingredients

  • 12 oz penne pasta
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup bell peppers, sliced (red, green, or mix)
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook penne until al dente. Drain and set aside.
  2. Season the Chicken: Sprinkle Cajun seasoning evenly over chicken breasts.
  3. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken 6–7 minutes per side until fully cooked. Remove and let rest before slicing.
  4. Sauté Vegetables: In the same skillet, add onion and bell peppers. Cook 3–4 minutes until tender. Stir in garlic and cook 1 minute until fragrant.
  5. Make the Sauce: Add heavy cream and chicken broth. Simmer 5–6 minutes until slightly thickened.
  6. Combine Pasta and Sauce: Add cooked pasta and sliced chicken. Toss to combine and sprinkle with Parmesan cheese. Season with salt and pepper to taste.
  7. Serve: Garnish with fresh parsley and extra Parmesan if desired. Serve immediately.
