Description
This easy creamy spinach pasta features a garlic Parmesan sauce with simple seasonings and a bright hint of lemon juice. It’s a comforting 30-minute meal that works with any pasta shape.
Ingredients
- Seasonings:
- ½ teaspoon dried oregano
- ½ teaspoon dried parsley
- ½ teaspoon mustard powder
- ¼ teaspoon garlic powder
- Sauce & Pasta:
- 4 tablespoons salted butter
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 cup half and half (half milk, half cream)
- 3 teaspoons lemon juice
- ¾ cup Parmesan cheese, finely grated
- 1½ cups fresh spinach
- ½ pound ziti rigati or penne pasta
Instructions
- Bring a pot of salted water to a boil for the pasta.
- Cook pasta according to package instructions. Drain and set aside.
- Melt butter in a skillet over medium-low heat. Add garlic and cook until butter foams and lightly browns.
- Increase heat to medium and whisk in flour. Cook for about 2 minutes, until golden and no longer smells raw.
- Add chicken broth in small splashes, stirring continuously.
- Slowly stir in the half and half.
- Add seasonings and lemon juice.
- Reduce heat to low and stir in Parmesan cheese, then add spinach.
- Mix drained pasta into the sauce. Let thicken slightly, then serve.
Notes
- Freshly grated Parmesan melts better and tastes best.
- Any pasta shape works well; ridged pasta holds the sauce especially well.
- Frozen spinach can be used if thawed and well-drained.
- Cherry tomatoes make a great addition when added with the spinach.
