Description

This easy creamy spinach pasta features a garlic Parmesan sauce with simple seasonings and a bright hint of lemon juice. It’s a comforting 30-minute meal that works with any pasta shape.


Ingredients

  • Seasonings:
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ½ teaspoon mustard powder
  • ¼ teaspoon garlic powder
  • Sauce & Pasta:
  • 4 tablespoons salted butter
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup half and half (half milk, half cream)
  • 3 teaspoons lemon juice
  • ¾ cup Parmesan cheese, finely grated
  • 1½ cups fresh spinach
  • ½ pound ziti rigati or penne pasta


Instructions

  1. Bring a pot of salted water to a boil for the pasta.
  2. Cook pasta according to package instructions. Drain and set aside.
  3. Melt butter in a skillet over medium-low heat. Add garlic and cook until butter foams and lightly browns.
  4. Increase heat to medium and whisk in flour. Cook for about 2 minutes, until golden and no longer smells raw.
  5. Add chicken broth in small splashes, stirring continuously.
  6. Slowly stir in the half and half.
  7. Add seasonings and lemon juice.
  8. Reduce heat to low and stir in Parmesan cheese, then add spinach.
  9. Mix drained pasta into the sauce. Let thicken slightly, then serve.

Notes

  • Freshly grated Parmesan melts better and tastes best.
  • Any pasta shape works well; ridged pasta holds the sauce especially well.
  • Frozen spinach can be used if thawed and well-drained.
  • Cherry tomatoes make a great addition when added with the spinach.
