Description

This Creamy Sun-Dried Tomato Garlic Chicken is a rich, flavorful one-pan dinner. Juicy chicken breasts simmered in a garlicky sun-dried tomato cream sauce with Parmesan cheese — perfect for weeknight meals.

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil or oil from your sun-dried tomato jar
  • 1 cup sun-dried tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream or half-and-half for a lighter option
  • ½ cup chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear until golden brown on both sides, about 3–4 minutes per side. Remove chicken and set aside.
  2. In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1–2 minutes until fragrant.
  3. Add heavy cream and chicken broth. Stir in Parmesan cheese and Italian seasoning. Simmer gently until the sauce thickens slightly.
  4. Return the chicken to the skillet and spoon sauce over the top. Reduce heat to medium-low and cook for 5–7 minutes, until chicken is cooked through.
  5. Serve warm, spooning extra sauce over the chicken. Pairs well with pasta, rice, or vegetables.

Notes

  • For extra flavor, use sun-dried tomatoes packed in oil.
  • Can substitute chicken breasts with thighs for a juicier result.
  • Leftovers store well in the fridge for up to 3 days.
