This Creamy Sun-Dried Tomato Garlic Chicken is a rich, flavorful one-pan dinner. Juicy chicken breasts simmered in a garlicky sun-dried tomato cream sauce with Parmesan cheese — perfect for weeknight meals.
Ingredients
- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil or oil from your sun-dried tomato jar
- 1 cup sun-dried tomatoes, chopped
- 4 cloves garlic, minced
- 1 cup heavy cream or half-and-half for a lighter option
- ½ cup chicken broth
- ½ cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear until golden brown on both sides, about 3–4 minutes per side. Remove chicken and set aside.
- In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1–2 minutes until fragrant.
- Add heavy cream and chicken broth. Stir in Parmesan cheese and Italian seasoning. Simmer gently until the sauce thickens slightly.
- Return the chicken to the skillet and spoon sauce over the top. Reduce heat to medium-low and cook for 5–7 minutes, until chicken is cooked through.
- Serve warm, spooning extra sauce over the chicken. Pairs well with pasta, rice, or vegetables.
