Ingredients
- 200g Halloumi cheese
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat a non-stick skillet over medium heat.
- Slice Halloumi into thick pieces and cook 2–3 minutes per side until golden brown.
- In a mixing bowl, combine quinoa, cherry tomatoes, cucumber, red onion, and Kalamata olives.
- Whisk olive oil, lemon juice, salt, and pepper; pour over salad mixture and toss gently.
- Top the salad with crispy Halloumi slices and garnish with fresh parsley.
- Serve immediately for maximum flavor.
