Description

This Crockpot Creamy Chicken Sausage Stew is the ultimate comfort food — hearty, creamy, and packed with rich flavor. Tender chicken, smoky sausage, and buttery potatoes come together in a creamy Parmesan broth for a satisfying family meal.


Ingredients

    • Main Ingredients
    • 2.5 lbs yellow potatoes, roughly chopped
    • 3 celery stalks, diced
    • 4 carrots, diced
    • 1 yellow onion, diced
    • 67 garlic cloves, minced
    • 3 tbsp unsalted butter, melted
    • 1 lb smoked sausage, sliced
    • 1 tsp cooking oil
    • 1.5 lbs boneless skinless chicken breasts or thighs
    • 5 cups low-sodium chicken broth
    • 2 tbsp cornstarch
    • 2 tbsp water
    • 1 cup heavy cream
    • 1 cup Parmesan cheese, freshly grated

  • 2 tsp Lawry’s Seasoned Salt
  • 1 tbsp Kinder’s Buttery Steakhouse Rub
  • 1 tbsp garlic powder
  • 1 tbsp black pepper
  • 1 tsp Herbs de Provence
  • Dried parsley, for garnish
  • Salt & pepper, to season chicken


Instructions

  1. Heat 1 tsp of cooking oil in a skillet over medium heat. Sear the sliced smoked sausage until lightly browned, about 3–4 minutes. Remove and set aside.
  2. In the same skillet, lightly season chicken breasts or thighs with salt and pepper, then sear each side for 2–3 minutes until golden. Transfer to the crockpot.
  3. Add potatoes, carrots, celery, onion, garlic, melted butter, and browned sausage to the crockpot.
  4. Pour in the chicken broth and add seasonings: Lawry’s Salt, Kinder’s Rub, garlic powder, black pepper, and Herbs de Provence. Stir to combine.
  5. Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken and vegetables are tender.
  6. In a small bowl, whisk together cornstarch and water. Stir into the crockpot along with heavy cream and Parmesan cheese. Cook an additional 20–30 minutes on High until the stew thickens and turns creamy.
  7. Shred chicken slightly if desired, stir well, and garnish with dried parsley before serving.
