Ingredients

  • 1 ¾ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup fresh or frozen blackberries
  • 1 tbsp lime zest
  • ¾ cup buttermilk
  • 1/3 cup melted butter (or vegetable oil)
  • 2 large eggs
  • 1 tbsp fresh lime juice
  • 1 tsp vanilla extract
  • For the Lime Glaze (optional):
  • ½ cup powdered sugar
  • 12 tbsp lime juice
  • Extra lime zest for garnish


Instructions

  1. Prepare the Muffin Batter: Preheat oven to 375°F (190°C). Line a muffin tin with liners. In a bowl, whisk flour, sugar, baking powder, baking soda, and salt. Fold in blackberries and lime zest.
  2. Combine Wet Ingredients: In another bowl, whisk buttermilk, melted butter, eggs, lime juice, and vanilla.
  3. Mix the Batter: Pour the wet ingredients into the dry and gently fold until just combined. Do not overmix.
  4. Bake: Divide batter into muffin cups. Bake 16–20 minutes or until golden and a toothpick comes out clean. Cool on a rack.
  5. Make Lime Glaze (Optional): Mix powdered sugar and lime juice, then drizzle over cooled muffins. Add lime zest on top.
  6. Serve: Enjoy warm or at room temperature.

Notes

  • You can use fresh or frozen blackberries—do not thaw frozen ones.
  • For extra lime flavor, add more zest into the batter.
