Bright, fluffy, fruity Blackberry Lime Muffins bursting with fresh berries and zesty lime. Perfect for breakfast or a sweet snack!
Ingredients
- 1 ¾ cups all-purpose flour
- ¾ cup granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup fresh or frozen blackberries
- 1 tbsp lime zest
- ¾ cup buttermilk
- 1/3 cup melted butter (or vegetable oil)
- 2 large eggs
- 1 tbsp fresh lime juice
- 1 tsp vanilla extract
- For the Lime Glaze (optional):
- ½ cup powdered sugar
- 1–2 tbsp lime juice
- Extra lime zest for garnish
Instructions
- Prepare the Muffin Batter: Preheat oven to 375°F (190°C). Line a muffin tin with liners. In a bowl, whisk flour, sugar, baking powder, baking soda, and salt. Fold in blackberries and lime zest.
- Combine Wet Ingredients: In another bowl, whisk buttermilk, melted butter, eggs, lime juice, and vanilla.
- Mix the Batter: Pour the wet ingredients into the dry and gently fold until just combined. Do not overmix.
- Bake: Divide batter into muffin cups. Bake 16–20 minutes or until golden and a toothpick comes out clean. Cool on a rack.
- Make Lime Glaze (Optional): Mix powdered sugar and lime juice, then drizzle over cooled muffins. Add lime zest on top.
- Serve: Enjoy warm or at room temperature.
Notes
- You can use fresh or frozen blackberries—do not thaw frozen ones.
- For extra lime flavor, add more zest into the batter.
