Description

A fun, whimsical, blue Cookie Monster–themed cheesecake packed with chocolate chip cookies, creamy filling, and playful decoration—perfect for kids and cookie lovers alike.


Ingredients

    • For the Crust:
    • 2 cups crushed chocolate chip cookies
    • 5 tbsp unsalted butter, melted
    • 2 tbsp granulated sugar

 

    • For the Cheesecake Filling:
    • 16 oz cream cheese, softened
    • 1/2 cup granulated sugar
    • 1/3 cup sour cream
    • 2 large eggs
    • 1 tsp vanilla extract
    • 1/2 cup crushed chocolate chip cookies
    • 1/2 cup mini chocolate chips
    • Blue gel food coloring (optional for classic Cookie Monster color)

 

  • For the Topping:
  • 1 cup whipped cream or whipped topping
  • 1/4 cup mini chocolate chips
  • 68 mini chocolate chip cookies
  • 2 large chocolate chip cookies (for Cookie Monster eyes)
  • Black icing or melted chocolate (for pupils)


Instructions

  1. Prepare the Crust: Preheat oven to 325°F (160°C). Combine crushed cookies, melted butter, and sugar. Press into a 9-inch springform pan. Bake 8–10 minutes and cool.
  2. Make the Cheesecake Filling: Beat cream cheese until smooth. Add sugar and sour cream. Blend in eggs one at a time, then vanilla. Fold in crushed cookies and mini chocolate chips. Add blue food coloring to desired shade.
  3. Bake the Cheesecake: Pour filling over cooled crust. Bake 45–50 minutes until edges are set. Turn off oven and cool inside for 45 minutes. Refrigerate 4 hours or overnight.
  4. Prepare the Topping: Spread whipped cream on the chilled cheesecake. Sprinkle mini chocolate chips around edges.
  5. Make the Cookie Monster Decoration: Place two large cookies as “eyes” near the top. Add black icing pupils. Add mini cookies across the top for a fun Cookie Monster look.
  6. Serve: Slice and enjoy this cookie-packed, kid-favorite cheesecake!
