Delicious Ground Beef Pasta Soup is a hearty, comforting meal made with deeply browned beef, aromatic garlic and herbs, seasoned pasta, and mushrooms simmered into a rich, flavorful broth. Perfect for an easy and satisfying dinner.
Ingredients
- For the soup:
- 1 lb ground beef (80/20 chuck preferred)
- 1/2 cup diced onion
- 1 package beef pasta meal kit (such as Hamburger Helper)
- 6 cups water
- 2 tsp dried basil
- 1/4 tsp black pepper
- 3 cloves garlic, freshly minced
- 4 oz canned mushrooms (stems and pieces)
- 1/2 tsp smoked paprika
- For garnish:
- 2 tbsp fresh parsley, chopped
Instructions
- Heat a large pot or Dutch oven over medium-high heat. Add ground beef and diced onion, breaking the beef into small pieces. Cook for 5–7 minutes until deeply browned and onions are softened. Drain excess fat, leaving a light coating.
- Add minced garlic and cook for 30 seconds until fragrant.
- Pour in water and add the sauce mix from the pasta meal kit, basil, black pepper, and smoked paprika. Stir well to combine.
- Bring to a boil, reduce heat to medium-low, cover, and simmer for 10 minutes.
- Stir in pasta from the meal kit and canned mushrooms with their liquid. Bring back to a boil, then reduce heat, cover, and simmer for 10 minutes, stirring occasionally.
- Remove from heat, adjust seasoning if needed, and serve garnished with fresh parsley.
