Description

This Easy Banana Magic Cake is a simple, delicious dessert made with everyday ingredients and ripe mashed banana. As it bakes, the thin batter separates into delicate layers, creating a soft cake with a rich, creamy custard center. Finished with a light dusting of powdered sugar, it’s an easy homemade treat perfect for sharing.

Ingredients

  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 tablespoon water
  • 2 cups lukewarm milk
  • 4 eggs, separated
  • 3/4 cup granulated sugar
  • 2 tablespoons light brown sugar
  • 1/2 cup mashed banana (about 1 medium banana)
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • Powdered sugar, for dusting

Instructions

  1. Prepare the oven and pan: Preheat the oven to 325°F (163°C). Lightly grease an 8×8-inch baking dish. Alternatively, line the dish with parchment paper, leaving some overhang on the sides to make the cake easier to lift out after cooling.
  2. Whip the egg whites: In a clean mixing bowl, beat the egg whites until stiff peaks form. Set aside.
  3. Beat the egg yolks and sugars: In a separate large bowl, beat the egg yolks with the granulated sugar and brown sugar until pale yellow and creamy.
  4. Add the butter and water: Mix in the melted, slightly cooled butter and water. Beat for about 2 minutes until evenly combined.
  5. Add the banana: Mix in the mashed banana just until incorporated.
  6. Add the flour: Gradually mix in the flour until evenly combined and no dry spots remain.
  7. Add the milk and vanilla: Slowly beat in the lukewarm milk and vanilla extract until the batter is smooth. The batter will be very thin, which is normal.
  8. Fold in the egg whites: Gently fold the whipped egg whites into the batter in three additions, adding about one-third at a time. Do not overmix; some floating egg-white pieces are normal.
  9. Bake: Pour the thin batter into the prepared baking dish. Bake for 45–60 minutes, until the top is golden and the center is barely jiggly. Begin checking at 45 minutes, as baking time can vary depending on your oven and pan. If the top browns too quickly, loosely cover it with aluminum foil.
  10. Cool and serve: Let the cake cool completely in the pan. Dust with powdered sugar just before serving. The center will remain slightly soft and jiggly because of its creamy custard layer.

Notes

  • Thin batter is normal: The batter will be very thin after adding the milk. This is what helps the cake form its signature layers as it bakes.
  • Whip the egg whites properly: Beat until stiff peaks form to help create the cake’s light texture.
  • Fold gently: Add the egg whites in three batches and fold carefully to avoid losing too much air.
  • Watch the baking time: Start checking the cake after 45 minutes. It is ready when the top is golden and the center is barely jiggly.
  • Prevent over-browning: If the top becomes too dark before the cake is done, cover it loosely with aluminum foil.
  • Cool completely: Allow the cake to cool before cutting or dusting with powdered sugar. The custard center will remain slightly soft even when fully cooled.
  • Serving: Dust with powdered sugar just before serving for a simple, pretty finish.
